Ingredients:
 

For the Cake:
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup milk
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup hot coffee (brewed strong)
     
For the Ganache Filling:
  • 1 cup heavy cream
  • 12 ounces semisweet chocolate chips
     
For the Chocolate Frosting:
  • 1 cup heavy cream
  • 12 ounces semisweet chocolate chips

 

Instructions:

1. Prepare the Cake:
  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Whisk together milk, oil, vanilla extract, and hot coffee in a separate bowl.
  • Gradually add the wet ingredients to the dry ingredients, mixing until combined. Do not overmix.
  • Divide the batter evenly between the prepared cake pans.  
  • Bake for 25-30 minutes, or until a toothpick inserted into the centre comes clean.
  • Let the cakes cool in the pans for 10 minutes before inverting them onto wire racks to cool completely.  
 
2. Make the Ganache Filling:
  • In a heatproof bowl, combine heavy cream and chocolate chips.
  • Place the bowl over a pot of simmering water (double boiler method) and stir constantly until the chocolate is melted and the mixture is smooth and glossy.
  • Remove from heat and let it cool slightly before using.
 
3. Assemble the Cake:
  • Once the cakes are completely cool, level them if necessary.
  • Place one cake layer on a serving plate.
  • Spread a generous layer of cooled ganache filling over the first cake layer.
  • Top with the second cake layer.
  • Frost the entire cake with the remaining ganache filling or use it to create a drip cake effect.
 
4. Make the Chocolate Frosting:
  • In a heatproof bowl, combine heavy cream and chocolate chips.
  • Place the bowl over a pot of simmering water (double boiler method) and stir constantly until the chocolate is melted and the mixture is smooth and glossy.
  • Remove from heat and let it cool slightly before using.
 
5. Frost the Cake:
  • Once the frosting has cooled slightly, frost the entire cake with it.
  • Use a spatula to smooth the frosting and create a clean finish.
  • Decorate the cake with chocolate shavings, sprinkles, or fresh berries.
