For those who love to bake, here’s a classic Yule Log Cake recipe to try:

 

Ingredients:

For the Sponge Cake:
  • 4 large eggs, separated
  • ¾ cup granulated sugar
  • ½ cup all-purpose flour
  • ¼ cup cocoa powder
  • Pinch of salt
 
For the Chocolate Filling:
  • 1 cup heavy cream
  • 1 cup semisweet chocolate chips
 
For the Chocolate Ganache:
  • ½ cup heavy cream
  • ½ cup semisweet chocolate chips
 
For Decoration:
  • Powdered sugar
  • Meringue mushrooms, cranberries, rosemary sprigs (optional)

 

 

Instructions:

1. Prepare the Sponge Cake:
  • Preheat the oven to 375°F (190°C). Line a 10x15 inch jelly roll pan with parchment paper.
  • In a large bowl, beat egg yolks and sugar until pale yellow.
  • In a separate bowl, whisk together flour, cocoa powder, and salt.
  • In another bowl, beat egg whites until stiff peaks form.
  • Gently fold the dry ingredients into the egg yolk mixture.
  • Carefully fold in the beaten egg whites.
  • Pour batter into the prepared pan and bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  • Immediately invert the cake onto a clean kitchen towel dusted with powdered sugar. Roll the cake up with the towel from the short end and let it cool completely.
 
2. Make the Chocolate Filling:
  • In a heatproof bowl, combine heavy cream and chocolate chips.
  • Place the bowl over a pot of simmering water (double boiler) and stir until chocolate is melted and smooth.
  • Let it cool slightly.
 
3. Make the Chocolate Ganache:
  • Repeat the same process as the filling using the ganache ingredients.
 
4. Assemble the Yule Log:
  • Unroll the cooled cake and spread the chocolate filling evenly.
  • Re roll the cake tightly without the towel.
  • Cut off a small portion of the cake at an angle and attach it to the side to resemble a branch.
  • Frost the entire cake with the chocolate ganache.
  • Use a fork to create a bark-like texture on the ganache.
  • Dust with powdered sugar and decorate with your choice of festive decorations.

 

Tips and Variations:

  • For a different filling, use a buttercream frosting or a chestnut puree.
  • Add a splash of rum or coffee liqueur to the filling for extra flavour.
  • Use white chocolate ganache for a snowy effect.
